Experience shows that Highland Agave have larger piñas and have a fruiter aroma is slower maturing and higher in sugar.
– Highland Tequilas such as Tapacio tend to have a fruitier aroma, green mango or William pears
– Lowland Agave are earthier and more robust.
– Chicano from Tamaulipas is more vegetal with lime zestyness.

This is what make people say that Tequila is aged in the plant, and not in a barrel nor a bottle !
